How We’re Learning


You know how we feel about lifelong learning; in case you don’t, we’re big proponents of it. That’s why we’re enrolled in Coursera. You can join for free and learn practically anything. We’re currently enrolled in a course on Data Science Specialization from Johns Hopkins University. But what we’re most excited about is their mobile app. You can use the app to listen to lectures and take notes; it’s user friendly and extremely beneficial for when you’re on the go.

What We’re Making

20 Minute Dinner for One: Tilapia

We’ve got a baked tilapia recipe fresh from Lydia’s kitchen for you with enough for dinner tonight and lunch tomorrow (oh, and by the way, this one won’t smell when reheated).


2 white fish fillets (6-8 oz. each)

½ cup of cornmeal

½ tsp of red pepper flakes

½ tsp of paprika

⅛ tsp of salt

⅛ tsp of pepper

1 egg

Let’s Get To It:

  1. Pre-heat oven to 400ºF.

  2. Rinse filets. Pat dry.

  3. Beat the egg in a bowl.

  4. Stick all dry ingredients in the blender. Blend until a dusty consistency. Spread on plate.

  5. Dip filets in egg wash. Pat in flour. Put on a baking sheet with parchment paper.

  6. Bake in oven for 10-15 minutes, depending on thickness of the filets.

  7. Serve one with a simple side salad. Wrap the other in tinfoil and throw it in the fridge for tomorrow’s lunch.
